The “Bees Knees” is a prohibition era cocktail and is named after the phrase meaning “the best”. We have to agree that this particular version is extremely good, especially as we are starting to see some warmer weather.
37.5ml Biggar Gin Plum Recipe
25ml lemon juice
Add the gin and honey to a shaker and stir until combined.
Add the lemon juice, egg white and ice and shake until chilled.
Remove the ice and shake again for 20-30 seconds
Double strain into a coupe glass
Garnish - we used a dehydrated plum slice in this example however a little lemon peel would work very well. We also drizzled a little bit of honey on top of the foam.
We hope you try the Biggar Bees Knees yourself and would love to see some photos of your serves.
The last bottles of last years plum gin batch will be on the web site this week, once it’s gone you’ll need to wait until after this years harvest!
